Approximately 75-85% of mature Monthong durian from durian plantations in Chanthaburi Province has been passed through the process of frying until golden brown. The fried durian chips are then dried in the oven to expel the oil from the chips for more than 3 hours to make them dry, crispy, delicious with low oil content.
